Wash and peel the sweet potatoes, then cut them into thin fries, about 1/4 inch thick.

In a large bowl, combine the sweet potato fries with olive oil, cornstarch, paprika, garlic powder, salt, and black pepper. Toss until all fries are evenly coated.

Spread the fries in a single layer on a baking sheet lined with parchment paper. Make sure they are not crowded to allow for even cooking.

In a small bowl, combine mayonnaise, sriracha sauce, lemon juice, minced garlic, and salt. Stir well until all ingredients are thoroughly mixed.
