Method

Preparation of Brisket

    Preparing the Brisket

    Trim excess fat from the beef brisket, leaving about 1/4 inch of fat for flavor.

    Making the Spice Rub

    In a bowl, combine salt, black pepper, paprika, garlic powder, onion powder, cayenne pepper, and brown sugar. Mix well.

    Applying the Rub

    Rub the spice mixture all over the brisket, ensuring it is evenly coated. Wrap it in plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Smoking Process

    Prepping the Smoker

    Soak hickory wood chips in water for at least 30 minutes before using. Preheat your smoker to 225°F (107°C).

    Smoking the Brisket

    Place the brisket fat side up on the smoker rack. Add the soaked hickory wood chips to the smoker. Smoke the brisket for approximately 1.5 hours per pound, or until it reaches an internal temperature of 195°F (90°C).

    Once the brisket reaches the desired temperature, remove it from the smoker and wrap it in butcher paper or aluminum foil. Let it rest for at least 30 minutes before slicing.
