Shrimp Preparation

    Marinate the Shrimp

    In a medium bowl, combine the peeled and deveined shrimp with buttermilk. Allow it to marinate for at least 30 minutes in the refrigerator.

    Prepare the Breading

    In another bowl, mix together the all-purpose flour, cornmeal, cajun seasoning, salt, and black pepper.

    Bread the Shrimp

    Remove the shrimp from the buttermilk, allowing excess to drip off. Dredge each shrimp in the flour mixture until fully coated. Set aside on a plate.

Frying the Shrimp

    Heat the Oil

    In a deep skillet or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    Carefully add the breaded shrimp to the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy. Remove shrimp with a slotted spoon and drain on paper towels.

Assembling the Po' Boys

    Prepare the Hoagie Rolls

    Slice the hoagie rolls lengthwise, leaving one side attached. Toast them lightly if desired.

    Build the Sandwich

    Spread a generous amount of remoulade sauce inside each hoagie roll. Layer in the crispy shrimp, followed by shredded lettuce and sliced tomatoes.

    Serve

    Close the sandwich and serve immediately with extra remoulade on the side, if desired.
