    Prepare the Dough

    In a small bowl, dissolve 2 tsp of active dry yeast and 1 tbs of sugar in 1 cup of warm water. Let it sit for about 5 minutes until it becomes frothy.

    Mix Ingredients

    In a large mixing bowl, combine 4 cups of all-purpose flour and 1 tbs of salt. Once the yeast mixture is frothy, pour it into the flour mixture and stir until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover it with a damp cloth, and let it rise for 1 hour or until doubled in size.

    Shape the Bites

    After rising, punch down the dough and turn it out onto a floured surface. Divide the dough into 8 equal pieces, then roll each piece into a rope about 1 inch thick. Cut each rope into 1-inch pieces to form pretzel bites.

    Boil the Bites

    In a large pot, bring 10 cups of water to a boil and stir in 2 tbs of baking soda. Carefully drop the pretzel bites into the boiling water, cooking in batches for about 30 seconds each. Remove with a slotted spoon and place on a greased baking sheet.

    Egg Wash and Bake

    Beat the egg in a small bowl and brush it over the pretzel bites. Sprinkle with coarse sea salt. Bake in a preheated oven at 450°F (232°C) for 12-15 minutes or until golden brown.

Beer Cheese Dip

    Prepare the Cheese Mixture

    In a medium saucepan over medium heat, combine 8 oz of cream cheese and 1 cup of beer. Stir until the cream cheese is melted and blended with the beer.

    Add Cheese and Seasonings

    Gradually add 2 cups of shredded cheddar cheese, stirring constantly until melted and smooth. Add 1 tsp of garlic powder, 2 tbs of mustard, 1 tbs of hot sauce, and season with salt and pepper to taste.

    Serve

    Remove from heat and transfer the beer cheese dip to a serving bowl. Serve warm alongside the pretzel bites.
