Cooking the Pasta

Prepare the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Once done, reserve 1 cup of pasta water, then drain the pasta.
Sautéing Vegetables

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the zucchini, bell pepper, and carrots. Cook for 3-4 minutes until they begin to soften.

Add Remaining Vegetables
Add the cherry tomatoes and spinach to the skillet. Continue to sauté for an additional 2-3 minutes, or until the spinach wilts and the tomatoes are slightly softened.
Combining and Serving

Combine Pasta and Vegetables
Add the cooked pasta to the skillet with the sautéed vegetables. Toss everything together, adding a little reserved pasta water if necessary to create a light sauce.

Season and Serve
Season with black pepper, and toss in the grated Parmesan cheese and chopped fresh basil. Mix until everything is well combined. Serve immediately, garnished with additional cheese and basil if desired.
