Method

Preparation of Wings

  1. 1

Step 1: Prepare the Chicken Wings

Rinse the chicken wings under cold water and pat them dry with paper towels. Place them in a large bowl.

  2. 2

    Step 2: Season the Wings

Drizzle olive oil over the chicken wings. Sprinkle smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper over the wings. Toss until the wings are evenly coated in the oil and seasonings.

Smoking Process

  1. 3

    Step 3: Prepare the Smoker

Soak the hickory wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C). Once preheated, add the soaked wood chips to the smoker box.

  2. 4

    Step 4: Smoke the Wings

Place the seasoned wings on the smoker rack, ensuring they are not touching. Close the smoker and smoke the wings for 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C).

Preparing Dipping Sauce

  1. 5

Step 5: Make the Dipping Sauce

In a small saucepan over medium heat, combine hot sauce, butter, and garlic powder. Stir until the butter is melted and the mixture is well-combined. Remove from heat.

Serving

  1. 6

    Step 6: Serve the Wings

Once the wings are done smoking, remove them from the smoker. Allow them to rest for a few minutes before serving. Serve hot with the dipping sauce on the side.
