Prepare the Chicken
Season the chicken breasts with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until fully cooked and golden brown. Remove from heat and let rest.

Prepare the Brisket
While the chicken is cooking, slice the smoked brisket into thin strips. Set aside.

Chop the Vegetables
Wash the spring mix lettuce thoroughly and pat dry. Slice the green bell pepper into thin strips.

Combine Ingredients
In a large mixing bowl, combine the spring mix, green bell pepper strips, and sliced smoked brisket. Drizzle with balsamic vinaigrette and toss gently to combine.

Plate the Dish
Slice the cooked chicken breasts and arrange them on top of the salad mixture. Drizzle the remaining olive oil over the top if desired and serve immediately.
