Method
Preparing the Fried Chicken

Marinate the Chicken
In a large bowl, combine the buttermilk and chicken pieces. Ensure the chicken is fully submerged. Cover and refrigerate for at least 4 hours or overnight.

Prepare the Coating
In another bowl, mix together the flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Coat and Fry the Chicken
Remove chicken pieces from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture until well coated. Fry chicken in batches until golden brown and cooked through, about 10-15 minutes. Drain on paper towels.
Making the Waffles

Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, sugar, and salt.

Combine Wet Ingredients
In another bowl, beat the eggs and then add the buttermilk, melted butter, and vanilla extract. Mix until combined.

Combine Mixtures
Pour the wet ingredients into the dry ingredients. Stir until just combined; do not overmix.

Cook the Waffles
Preheat a waffle iron according to manufacturers' instructions. Pour enough batter onto the waffle iron to cover the surface. Close and cook until golden brown, about 5 minutes. Repeat with remaining batter.
Serving

Plate and Serve
On a plate, stack a waffle and top it with two pieces of fried chicken. Drizzle with maple syrup and hot honey to taste. Serve immediately.
