Method

Preparing the Wings

  1. 1

    Season the Wings

In a large bowl, combine the chicken wings with olive oil, salt, black pepper, garlic powder, and paprika. Toss until the wings are evenly coated.

  2. 2

    Preheat the Smoker

Preheat your smoker to 225°F (107°C).

  3. 3

    Smoke the Wings

Place the seasoned wings on the smoker rack and smoke for about 1.5 to 2 hours, or until the wings are cooked through and have reached an internal temperature of 165°F (74°C).

Making the Beer Cheese Sauce

  1. 4

    Melt Butter

In a medium saucepan over medium heat, melt the butter.

  2. 5

    Make Roux

Add the all-purpose flour to the melted butter, stirring constantly for about 1 minute to create a roux.

  3. 6

    Add Liquids

Gradually whisk in the milk and beer, stirring until smooth and thickened, about 3-5 minutes.

  4. 7

    Add Cheeses

Reduce the heat to low and stir in the shredded cheddar cheese and cream cheese until melted and smooth. If desired, add hot sauce to taste.

Serving the Wings

  1. 8

    Coat the Wings

Once the wings are smoked, remove them from the smoker and toss them in your choice of buffalo or BBQ sauce.

  2. 9

    Serve with Beer Cheese Sauce

Serve the wings hot with a generous side of beer cheese sauce for dipping.
