Preparing the Wings

Season the Wings
In a large bowl, combine the chicken wings with olive oil, salt, black pepper, garlic powder, and paprika. Toss until the wings are evenly coated.

Preheat the Smoker
Preheat your smoker to 225°F (107°C).

Smoke the Wings
Place the seasoned wings on the smoker rack and smoke for about 1.5 to 2 hours, or until the wings are cooked through and have reached an internal temperature of 165°F (74°C).

Add the all-purpose flour to the melted butter, stirring constantly for about 1 minute to create a roux.

Gradually whisk in the milk and beer, stirring until smooth and thickened, about 3-5 minutes.

Reduce the heat to low and stir in the shredded cheddar cheese and cream cheese until melted and smooth. If desired, add hot sauce to taste.
