Prepare the Chicken
Pound the chicken breasts to an even thickness for uniform cooking.

Bread the Chicken
Dredge each chicken breast first in the flour, then dip in the beaten eggs, and finally coat with the bread crumb mixture.
Cooking the Chicken

Heat the Oil
In a large skillet, heat the oil over medium-high heat until shimmering.

Fry the Chicken
Carefully add the breaded chicken breasts to the hot oil and fry for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
Making the Buffalo Sauce

Melt Butter
In a small saucepan, melt the butter over low heat.

Combine with Hot Sauce
Once melted, whisk in the hot sauce until well combined. Remove from heat.

Toss the Chicken
In a large bowl, toss the fried chicken breasts in the buffalo sauce until evenly coated.
Assembling the Sandwich

Take the toasted burger buns and place a lettuce leaf on the bottom half of each bun.

Place a buffalo chicken breast on top of the lettuce, add blue cheese crumbles, and top with sliced tomatoes.

Finish with the top half of the bun. Serve immediately with extra buffalo sauce on the side if desired.
