Brisket Preparation

    Prepare the Brisket

    If not already smoked, smoke the brisket according to your preferred method. Once cooked, let it rest for at least 30 minutes before slicing it into small pieces.

    Mix with BBQ Sauce

    In a large bowl, combine the sliced smoked brisket with BBQ sauce, tossing to ensure the meat is evenly coated.

Cheese Sauce Preparation

    Make the Roux

    In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1-2 minutes until light golden brown.

    Add Milk and Cheese

    Gradually pour in the milk while whisking continuously to prevent lumps. Once combined, increase heat slightly and bring to a gentle simmer. Stir in the cheddar cheese, salt, and black pepper until the cheese is fully melted and the sauce is smooth.

    Layer the Nachos

    On a large baking sheet or oven-safe dish, spread an even layer of tortilla chips. Top with the BBQ brisket mixture, then pour the cheese sauce generously over the top.
