Preparation of Brisket

    Cook the Brisket

    If not already cooked, season the brisket with salt and black pepper. Slow-cook or braise the brisket at 225°F (107°C) for about 6 hours or until tender. Slice thinly against the grain.

    Prepare the Bread

    Spread Dijon mustard on one side of each slice of bread.

    Layer the Cheese

    On the non-mustard side of two slices, layer one slice of cheddar cheese, followed by a layer of sliced brisket, and then a slice of gouda cheese.

    Top the Sandwich

    Place the other two slices of bread on top, mustard side down, to form two sandwiches.

Cooking

    Grill the Sandwiches

    Heat a skillet or griddle over medium heat. Melt 1 tablespoon of butter and place the sandwiches in the skillet. Grill for about 4-5 minutes on each side, or until the bread is golden brown and the cheese has melted.

Serving

    Slice and Serve

    Once grilled, remove the sandwiches from the skillet. Let them cool for a minute, then slice in half and serve hot.
