Sweet Potato Fries

Prepare Sweet Potatoes
Preheat your oven to 425°F (220°C).

Cut and Season
Peel the sweet potatoes and cut them into fries. In a bowl, toss the fries with olive oil, salt, paprika, and garlic powder until evenly coated.

Bake
Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, turning halfway through, until crispy and golden brown.

Prepare Pork
In a slow cooker, place the pork shoulder. Season with salt and black pepper, then add the chopped onion and minced garlic.

Add Liquids
Pour in the chicken broth and BBQ sauce over the pork.

Cover and cook on low for 8 hours or on high for 4 hours, until the pork is tender and easily shredded.

Shred Pork
Remove the pork from the slow cooker and shred it with two forks. Return the shredded pork to the slow cooker and mix with the remaining sauce.

In a saucepan over medium heat, combine the shredded cheddar cheese, cream cheese, beer, garlic powder, and Dijon mustard.

Stir continuously until the cheese is melted and the mixture is smooth. Remove from heat.

On a serving plate, layer the sweet potato fries, followed by the BBQ pulled pork, and drizzle with beer cheese. Top with chopped scallions.
