Prepare the Pork
Start by trimming excess fat from the pork shoulder.

Make the Spice Rub
In a small bowl, mix together paprika, cayenne pepper, salt, and black pepper. Rub this mixture all over the pork shoulder.

Sear the Pork
In a large skillet, heat olive oil over medium-high heat. Add the pork shoulder and sear it on all sides until browned, about 4-5 minutes per side.

Place sliced onion and minced garlic at the bottom of the slow cooker.

Transfer the seared pork shoulder to the slow cooker on top of the onions and garlic. Pour in the apple cider vinegar, water, and brown sugar. Finally, add the BBQ sauce.

Cover and cook on low for 8-10 hours or until the pork is tender and easily shreds with a fork.

Once cooked, remove the pork from the slow cooker and shred it with two forks.
