Cook the Lasagna Noodles
Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente. Drain and lay them flat on a clean surface to prevent sticking.

Prepare the Vegetable Filling
In a large skillet, heat olive oil over medium heat. Add the diced zucchini, bell pepper, and sliced mushrooms. Sauté for about 5-7 minutes until the vegetables are soft. Stir in the minced garlic and fresh spinach, cooking until the spinach wilts. Season with salt and black pepper. Remove from heat and set aside.

Make the Cheese Mixture
In a medium bowl, combine the ricotta cheese, grated Parmesan cheese, and egg. Mix well until smooth. Stir in the shredded mozzarella cheese and Italian seasoning until evenly combined.

Layer the Ingredients
Preheat your oven to 375°F (190°C). In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom. Place 3 lasagna noodles over the sauce. Spread half of the cheese mixture over the noodles, followed by half of the vegetable filling. Add a layer of marinara sauce, then repeat the layering process with 3 more noodles, the remaining cheese mixture, the remaining vegetable filling, another layer of marinara sauce, and finally top with the last 3 noodles.

Final Touch
Spread the remaining marinara sauce over the top layer of noodles and sprinkle with any remaining mozzarella cheese. Cover the baking dish with aluminum foil.
