Preparing the Chicken

Season the Chicken
Rub the boneless chicken breasts with olive oil, salt, black pepper, garlic powder, and paprika evenly on both sides.

Heat the Pan
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until it shimmers.

Cook the Chicken
Place the seasoned chicken breasts in the hot skillet and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.

Once cooked, remove the chicken from the skillet and let it rest on a plate for 5 minutes before slicing.

Prepare the Vegetables
Chop the mixed seasonal vegetables into bite-sized pieces.

In the same skillet used for the chicken, add 1 tablespoon of olive oil. Add the chopped vegetables and sauté for about 5-7 minutes, or until they are tender-crisp. Season with salt and black pepper to taste.
