Method
Preparing the Calamari

Clean the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, and black pepper.

Coat the Calamari
Dredge the calamari rings in the flour mixture, ensuring they are evenly coated.
Frying the Calamari

Heat the Oil
In a deep skillet or frying pan, heat the olive oil over medium-high heat until it shimmers.

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches; do not overcrowd the pan. Fry for about 1-2 minutes or until golden brown.

Drain and Serve
Remove the calamari from the oil and place on a plate lined with paper towels to drain excess oil. Serve immediately with lemon wedges.

In a small bowl, mix together the mayonnaise, minced garlic, sriracha sauce, and lemon juice.
