    Prepare the Steaks

    Take the filet mignon steaks out of the refrigerator and let them come to room temperature, about 30 minutes before cooking.

    Season the Steaks

    Pat the steaks dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Steaks

    Heat the olive oil in a large skillet over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.

    Add Butter and Thyme

    During the last minute of cooking, add the butter and thyme to the skillet. Baste the steaks with the melted butter for added flavor.

    Rest the Steaks

    Remove the steaks from the skillet and let them rest for at least 5 minutes before slicing.

Garlic Mashed Potatoes

    Boil the Potatoes

    Peel and chop the potatoes into uniform pieces. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes.

    Cook the Garlic

    While the potatoes are cooking, peel and crush the garlic cloves. In a small saucepan, melt 2 tablespoons of butter over medium heat and sauté the garlic until fragrant, about 1 minute. Be careful not to burn it.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add the remaining butter, sautéed garlic, milk, salt, and black pepper. Mash until creamy and smooth.

    Serve

    Serve the garlic mashed potatoes alongside the filet mignon for a delicious meal.
