    Prepare the Calamari

    Rinse calamari rings under cold water and pat dry with paper towels.

    Create the Coating

    In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well to ensure even distribution of the spices.

    Soak in Buttermilk

    Place the dried calamari rings into another bowl and cover them with buttermilk. Let them soak for at least 30 minutes.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Calamari

    Remove the calamari from the buttermilk and let excess liquid drip off. Dredge the rings in the flour mixture until fully coated.

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Spicy Aioli

    Mix the Ingredients

    In a bowl, combine the mayonnaise, minced garlic cloves, Sriracha sauce, lemon juice, and salt. Mix well until smooth and creamy.

    Adjust Seasoning

    Taste the aioli and adjust the seasoning with more Sriracha or salt as needed.
