Preparation

    Preheat the Oven

    Preheat your oven to 200°C (390°F).

    Prepare the Ramekins

    Grease four ramekins with butter and dust with cocoa powder to prevent sticking.

Making the Fondant

    Melt the Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in short bursts, stirring until smooth.

    Mix the Sugar and Eggs

    In a separate bowl, whisk together the granulated sugar, whole eggs, and egg yolks until pale and frothy.

    Combine Mixtures

    Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously to combine.

    Add Flour and Vanilla

    Sift in the all-purpose flour and add the vanilla extract. Gently fold the mixture until just combined; do not overmix.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling them about ¾ full.

    Place the ramekins on a baking sheet and bake in the preheated oven for 10-12 minutes, until the edges are set but the center remains soft.

Serving

    Cool and Serve

    Remove the ramekins from the oven and let them cool for 1 minute. Invert each ramekin onto a plate, gently tapping to release the fondant. Dust with powdered sugar, and serve warm with a scoop of vanilla ice cream and fresh berries.
