    Clean the Clams

    Rinse the fresh clams under cold running water to remove any sand or grit. Scrub the shells gently to ensure they are clean. Soak them in a bowl of salted water for about 30 minutes to help purge any remaining sand.

    Chop the Aromatics

    Finely chop the garlic and shallots. Roughly chop the fresh parsley, separating the leaves from the stems.

Cooking

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped garlic and shallots, and sauté until they become fragrant and translucent, about 3-4 minutes.

    Add Wine and Broth

    Pour in the dry white wine and vegetable broth. Bring the mixture to a simmer and allow it to cook for about 5 minutes to reduce slightly.

    Add Clams

    Add the cleaned clams to the pot. Sprinkle in the red pepper flakes, salt, and black pepper. Cover the pot with a lid and cook for about 8-10 minutes, or until the clams have opened up. Discard any clams that remain closed.

    Finish with Parsley

    Once the clams are cooked, remove the pot from heat. Stir in the chopped parsley, reserving some for garnish. Taste and adjust seasoning if necessary.

    Ladle the zuppa di clams into bowls and garnish with the reserved parsley. Serve immediately with crusty bread for dipping.
