Preparing the Salad

Wash and Prepare the Greens
Thoroughly wash the fresh spinach under cold water and dry it using a salad spinner or paper towels. Place the spinach in a large salad bowl.

Prepare the Fruits
Slice the strawberries and add them to the salad bowl along with the blueberries. Ensure the fruits are fresh and clean.

Slice the Onion
Peel the red onion and slice it thinly. Add the sliced onion to the salad bowl.

Roughly chop the pecans if desired and sprinkle them over the salad.

Crumble the goat cheese into small pieces and sprinkle it over the top of the salad.
Making the Champagne Vinaigrette

In a small bowl or a jar, combine the champagne vinegar, olive oil, Dijon mustard, honey, salt, and black pepper.

Whisk the ingredients together until well combined, or seal the jar and shake vigorously until mixed.
