Preparation

    Prepare the Spinach

    Wash the fresh spinach leaves thoroughly under cold running water. Pat them dry with a clean kitchen towel or use a salad spinner to remove excess moisture. Place the spinach in a large salad bowl.

    Prepare the Fruits

    Hull the strawberries and slice them into thin pieces. Rinse the blueberries under cold water. Add both the sliced strawberries and blueberries to the bowl with spinach.

    Prepare the Nuts

    Roughly chop the pecans if they are whole. Toast them in a dry skillet over medium heat for about 3-5 minutes, stirring often until they are fragrant. Remove from heat and let cool slightly before adding to the salad.

    Prepare the Onion

    Peel and thinly slice the small red onion. If desired, soak the slices in cold water for about 10 minutes to mellow the flavor, then drain. Add to the salad bowl.

    Prepare the Cheese

    Crumble the goat cheese into small pieces. Sprinkle the crumbled goat cheese over the top of the salad.

    Dress the Salad

    Drizzle the champagne vinaigrette over the salad. Start with a smaller amount and add more to taste. Toss gently to combine all ingredients evenly.
