Cooking the Pasta

    Boil Water

    Bring a large pot of salted water to a boil over high heat.

    Cook the Tagliatelle

    Add the tagliatelle to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Preparing the Shrimp Scampi

    Heat the Olive Oil

    In a large skillet, heat the olive oil over medium heat until shimmering.

    Sauté the Garlic

    Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.

    Cook the Shrimp

    Add the shrimp to the skillet and cook for about 2-3 minutes, until they turn pink and opaque.

    Add Tomatoes and Capers

    Stir in the halved cherry tomatoes and capers, cooking for another 2-3 minutes until the tomatoes start to soften.

    Deglaze with White Wine

    Pour in the white wine and bring the mixture to a simmer. Let it cook for about 3-4 minutes to reduce slightly.

    Finish the Sauce

    Stir in the lemon juice, salt, and black pepper. Cook for an additional minute to meld the flavors together.

    Combine with Pasta

    Add the cooked tagliatelle to the skillet and toss to coat the pasta in the sauce. Cook for an additional minute if needed.

    Garnish and Serve

    Remove from heat, sprinkle with chopped parsley, and serve immediately.
