Prepare Short Ribs

    Season and Sear

    Season the short ribs with salt and black pepper. Heat olive oil in a heavy pot over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side.

    Sauté Vegetables

    Remove the short ribs from the pot and set aside. In the same pot, add onion, carrot, celery, and garlic. Sauté until softened, about 5 minutes.

    Deglaze and Braise

    Add red wine to the pot, scraping up any browned bits from the bottom. Bring to a boil and reduce by half. Return short ribs to the pot, add beef broth, thyme, and bay leaves. Bring to a simmer, cover, and braise in the oven at 325°F (160°C) for 2.5 to 3 hours until tender.

Prepare Mushroom Sauce

    Sauté Mushrooms

    In a skillet, melt butter over medium heat. Add sliced crimini mushrooms and sauté until browned, about 5-7 minutes.

    Make Sauce

    Sprinkle flour over the mushrooms and stir to combine. Gradually add heavy cream, stirring constantly until thickened. Season with salt and black pepper.

Cook Tagliatelle

    Boil Water

    In a large pot, bring 4 quarts of salted water to a boil.

    Cook Pasta

    Add tagliatelle to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Serve

    Plate the Dish

    Place a serving of tagliatelle on each plate, top with the braised short rib, and spoon the mushroom sauce over the top. Serve hot.
