Method

Preparing the Mussels

    Clean the Mussels

    Rinse the mussels under cold running water. Scrub the shells with a brush to remove any dirt or barnacles. Remove the beards by pulling them off with your fingers.

    Sauté Garlic

    In a large pot, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1-2 minutes until fragrant.

    Add Mussels

    Add the cleaned mussels to the pot, along with salt and black pepper to taste. Stir to combine.

Making the Marinara Sauce

    Cook Onions and Peppers

    In a separate saucepan, heat a tablespoon of olive oil over medium heat. Add the diced onion and red bell pepper, and sauté for about 5 minutes until softened.

    Combine Ingredients

    Add the canned crushed tomatoes, oregano, basil, and sugar to the saucepan. If using, pour in the red wine. Stir well and allow it to simmer for about 15-20 minutes.

    Combine with Mussels

    Once the marinara sauce is ready, pour it over the mussels in the pot. Cover the pot and steam the mussels for about 5-7 minutes, or until they open up.

Serving

    Serve the Dish

    Garnish the mussels with chopped parsley and serve hot with crusty bread for dipping into the spicy marinara sauce.
