Preparing the Cannoli Shells

Make the Dough
In a large mixing bowl, combine 2 cups of all-purpose flour, 2 tablespoons of granulated sugar, and 1 teaspoon of salt. Mix well. Add 3 tablespoons of unsalted butter, 2 egg yolks, and 1 tablespoon of white wine or vinegar. Knead the mixture until a smooth dough forms.

Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Roll Out the Dough
After chilling, divide the dough into smaller portions. Roll out each portion on a floured surface until it's thin (about 1/8 inch thick).

Cut and Shape the Shells
Using a round cutter (about 4 inches in diameter), cut out circles from the rolled dough. Wrap each circle around a cannoli form, sealing the edges with a bit of water.

Fry the Shells
Heat oil in a deep frying pan to 350°F (175°C). Fry the shaped dough in batches until golden brown, about 2-3 minutes. Remove and drain on paper towels.

In a mixing bowl, combine 1 cup of ricotta cheese, 1 cup of powdered sugar, and 1 teaspoon of vanilla extract. Mix until smooth and creamy.

Add Chocolate Chips
Fold in 1 cup of mini chocolate chips into the ricotta mixture until evenly distributed.
Assembling the Cannoli

Fill the Shells
Using a piping bag or a spoon, fill each cooled cannoli shell with the ricotta filling.

Sprinkle the filled cannoli with powdered sugar and optional chocolate shavings or cocoa powder. For added texture, you can also sprinkle chopped pistachios on the ends of the cannoli.
