Pasta Preparation

    Cook Linguine

    Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente, usually about 9-11 minutes.

    Drain Pasta

    Once cooked, drain the linguine in a colander and reserve about 1 cup of the pasta water for later use.

Sauce Preparation

    Prepare Tomatoes

    While the pasta cooks, chop the ripe tomatoes into small cubes and place them in a large mixing bowl.

    Add Garlic

    Mince the garlic cloves and add them to the tomatoes in the mixing bowl.

    Mix in Mozzarella and Basil

    Cut the fresh mozzarella into small cubes and add to the bowl with the tomatoes and garlic. Tear the basil leaves into smaller pieces and add them as well.

    Dress the Mixture

    Drizzle the olive oil over the tomato mixture and season with black pepper to taste. Gently mix everything together to combine.

Combine and Serve

    Combine Pasta and Sauce

    Add the drained linguine to the bowl with the tomato mixture. Toss gently to combine, adding reserved pasta water a little at a time until the desired consistency is reached.

    Serve

    Transfer the linguine alla checca to serving plates and garnish with additional fresh basil if desired. Serve immediately.
