Gnocchi Preparation

    Boil Potatoes

    Place the potatoes in a pot of salted water and bring to a boil. Cook until fork-tender, about 20 minutes. Drain and let cool slightly.

    Mash Potatoes

    Once the potatoes are cool enough to handle, peel them and mash them in a large bowl until smooth.

    Make Gnocchi Dough

    Add flour, egg, and salt to the mashed potatoes. Mix until a soft dough forms. If the dough is too sticky, add more flour as needed.

    Shape Gnocchi

    On a floured surface, divide the dough into 4 pieces. Roll each piece into a long rope about 1/2 inch thick. Cut into 1-inch pieces and use a fork to create ridges on each piece.

    Cook Gnocchi

    Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water in batches. Cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Sausage in Pink Cream Sauce Preparation

    Cook Sausage

    In a large skillet over medium heat, add olive oil. Once hot, add ground sausage. Cook until browned and cooked through, about 5-7 minutes. Remove excess fat if needed.

    Add Garlic

    Add minced garlic to the skillet and sauté for another minute until fragrant.

    Make the Sauce

    Pour in the tomato sauce and heavy cream. Stir well to combine and simmer for 5-10 minutes until the sauce thickens slightly.

    Add Cheese and Season

    Stir in the grated parmesan cheese, black pepper, and red pepper flakes. Allow to simmer for an additional 2-3 minutes.

    Combine Gnocchi and Sauce

    Gently fold the cooked gnocchi into the sausage and cream sauce. Cook for another 2 minutes to heat through.

    Garnish and Serve

    Serve hot, garnished with chopped fresh basil on top.
