Preparing the Gelato Base

Combine Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling.

Whisk Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

Cook the Mixture
Cook the mixture over medium heat, stirring constantly with a wooden spoon, until it thickens enough to coat the back of the spoon (about 5-7 minutes).

Add Vanilla Extract
Remove the saucepan from the heat and stir in the vanilla extract. Allow the mixture to cool to room temperature.
Flavoring the Gelato

Prepare Flavor Enhancements
Depending on your desired flavor, mix in cocoa powder, fruit puree, chocolate chips, or Nutella into the cooled gelato base. Stir until fully incorporated.
Churning the Gelato

Chill the Mixture
Cover the mixture and place it in the refrigerator for at least 2 hours to chill thoroughly.

Churn the Gelato
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Freezing the Gelato

Transfer to Container
Transfer the churned gelato to an airtight container and smooth the top with a spatula.

Cover with a lid or plastic wrap and freeze for at least 4 hours or until firm.
