Seafood Preparation

Prepare the Seafood
In a large bowl, combine the cleaned calamari, shrimp, and cod pieces. Set aside.

Make the Batter
In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water and mix until just combined. The batter should be slightly lumpy.
Frying

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Seafood
Dip the seafood pieces into the batter, allowing the excess to drip off. Carefully place them in the hot oil, working in batches to avoid overcrowding. Fry until golden brown and crispy, about 2-3 minutes for calamari and shrimp, and 3-4 minutes for cod. Use a slotted spoon to remove them from the oil and drain on paper towels.
Lemon Aioli Preparation

Make the Lemon Aioli
In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, salt, and black pepper. Adjust seasoning to taste.

Arrange the fried seafood on a serving platter and serve hot with the lemon aioli on the side.
