    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl. Stir the water to create a gentle whirlpool and carefully slide the eggs into the water. Poach for 3-4 minutes, until the whites are set but the yolks are still runny. Remove with a slotted spoon and drain on paper towels.

    In a skillet over medium heat, add the Canadian bacon slices and cook for 2-3 minutes on each side, until heated through and slightly crispy.

Making the Hollandaise Sauce

    In a heatproof bowl, whisk together the egg yolks, lemon juice, Dijon mustard, and salt. Set the bowl over a saucepan of simmering water (double boiler method), and whisk vigorously until the mixture thickens and doubles in volume, about 3-4 minutes.

    Gradually add melted butter while continuously whisking, until the sauce is smooth and emulsified. Season with cayenne pepper and additional salt to taste.
