Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix thoroughly.

Prepare Breadcrumbs
Place the panko breadcrumbs in a shallow dish.

Coat the Calamari
Dredge each calamari ring in the flour mixture, dip it in the beaten eggs, then coat it with panko breadcrumbs. Ensure each piece is well coated.
Fry the Calamari

Heat the Oil
In a deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Working in batches, carefully add the coated calamari rings to the hot oil. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Sauté Garlic
Add the minced garlic and sauté for 1-2 minutes until fragrant.

Add Tomatoes and Spices
Stir in the crushed tomatoes, dried oregano, salt, and black pepper. Bring to a simmer.

Cook Sauce
Let the sauce simmer for about 15-20 minutes, stirring occasionally, until slightly thickened. Stir in the fresh basil before serving.
