Method

    In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.

    In a large bowl, using an electric mixer, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.

    Beat in the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract.

    Gradually add the flour mixture to the wet ingredients, mixing until just combined. Avoid overmixing.

    Gently fold in the semi-sweet chocolate chunks until evenly distributed in the dough.

    Preheat the oven to 350°F (175°C). Spread the cookie dough into a greased pie dish, smoothing the top. Bake for 25-30 minutes or until golden brown. Let it cool before adding gelato.

Gelato Assembly

    Add Gelato

    Once the cookie pie has cooled, scoop the vanilla bean gelato on top of the cookie base, spreading it evenly.

Chocolate Drizzle Preparation

    Melt Chocolate

    In a microwave-safe bowl, combine the semi-sweet chocolate chips and heavy cream. Microwave in 30-second intervals, stirring in between, until smooth and melted.

    Drizzle Over Pie

    Using a spoon or a piping bag, drizzle the melted chocolate over the gelato layer of the cookie pie.
