Method
Preparing the Cake
- 1
Melt Chocolate and Butter
In a medium heatproof bowl, combine the bittersweet chocolate and unsalted butter. Place the bowl over a saucepan of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.
- 2
Mix Sugar and Eggs
In a separate mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is thick and pale, about 3 minutes.
- 3
Combine Mixtures
Gradually pour the melted chocolate mixture into the egg mixture while continuously whisking until well combined.
- 4
Add Vanilla and Flour
Stir in the vanilla extract and all-purpose flour until just combined. Do not over-mix.
- 5
- 6
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 7
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center remains soft.
Serving the Cake
- 8
Cool and Serve
Remove the ramekins from the oven and let cool for 1 minute. Run a small knife around the edges to loosen the cakes, then invert each ramekin onto a plate. Gently lift the ramekin to reveal the cake.
- 9
Add Ice Cream
Serve immediately with a scoop of vanilla ice cream on top or on the side.
