Calamari

Method

Prepare the Marinara Sauce

    Heat the Olive Oil

    In a medium saucepan over medium heat, add the olive oil.

    Sauté the Garlic

    Add the minced garlic cloves and sauté for about 1 minute until fragrant.

    Add the Tomatoes and Seasonings

    Stir in the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Bring to a simmer.

    Simmer the Sauce

    Let the sauce simmer for 15-20 minutes, stirring occasionally. Stir in the fresh basil just before serving.

Prepare the Calamari

    Mix Dry Ingredients

    In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and garlic powder.

    Prepare the Egg Mixture

    In another bowl, whisk together the egg and milk until well combined.

    Heat the Oil

    In a large deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Coat the Calamari

    Dip each calamari ring in the egg mixture, then dredge in the flour mixture until fully coated.

    Fry the Calamari

    Carefully place the coated calamari in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown.

    Drain and Serve

    Remove the fried calamari with a slotted spoon and drain on paper towels. Serve hot with the marinara sauce.
