Prepare the Blackened Mahi

    Rub each Mahi Mahi fillet with the blackening seasoning evenly on both sides.

    Heat olive oil in a cast-iron skillet over medium-high heat. Once hot, add the seasoned fillets and cook for about 4-5 minutes on each side until blackened and cooked through. Remove from heat and let rest.

Make the Cabbage Slaw

    Combine Slaw Ingredients

    In a large bowl, mix the shredded cabbage, shredded carrot, chopped cilantro, lime juice, and salt until well combined.

Prepare Jalapeño Ranch Dressing

    Mix the Dressing

    In a small bowl, combine the ranch dressing, diced jalapeños, and lime juice. Stir until well mixed.

Assemble the Wraps

    Layer the Ingredients

    On each flour tortilla, place a generous portion of cabbage slaw, followed by a cooked Mahi fillet, and top with shredded pepperjack cheese and a drizzle of jalapeño ranch dressing.

    Fold in the sides of the tortilla and roll it up tightly from the bottom to the top to create a wrap. Repeat with the second tortilla.
