Method

Preparing the Potatoes

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Clean the Potatoes

    Scrub the Russet potatoes under cold water and dry them thoroughly with a towel.

    Bake the Potatoes

    Prick each potato several times with a fork, then rub them with olive oil and sprinkle with salt and black pepper. Place them directly on the oven rack and bake for 45-60 minutes, or until tender.

Scooping and Topping

    Scoop out the Flesh

    Once the potatoes are cool enough to handle, cut them in half lengthwise. Scoop out a portion of the flesh, leaving a thin layer of potato on the skin to maintain structure.

    Brush with Oil

    Brush the insides of the potato skins with olive oil and season with salt and pepper.

    Add Toppings

    Place the skins on a baking sheet, skin-side down. Fill each skin with a generous amount of cheddar cheese and chopped bacon.

    Return the loaded potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Remove the potato skins from the oven and top with sliced green onions. Serve warm with a side of sour cream.
