    Prepare the Dough

    In a large mixing bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy. Add the flour, salt, and 2 tablespoons of olive oil. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place in a greased bowl, cover with a kitchen towel, and let rise in a warm place for 1 hour or until doubled in size.

    Shape the Focaccia

    Once risen, punch down the dough and transfer to a greased baking sheet. Stretch the dough out to fit the sheet, making dimples with your fingers in the surface.

    Add Toppings

    Drizzle the remaining olive oil over the top. Sprinkle fresh rosemary and coarse sea salt to taste.

    Bake

    Preheat the oven to 425°F (220°C). Bake the focaccia for 20-25 minutes or until golden brown.

    Allow to cool slightly before cutting into squares. Serve warm as a snack or appetizer.
