    Prepare Potato Skins

    Preheat the oven to 400°F (200°C). Wash the potatoes and pierce them with a fork. Bake the potatoes for 45 minutes or until soft. Remove from the oven, let cool slightly, and cut them in half lengthwise. Scoop out the insides, leaving about 1/4 inch of potato on the skin.

    Add Toppings

    Sprinkle the potato skins with cheddar cheese and bacon bits. Place them back in the oven for an additional 10-15 minutes or until the cheese is melted and bubbly.

    Serve

    Remove from the oven, top with sour cream and chives. Serve warm.

    Prepare Corned Beef

    Place the corned beef brisket in a large pot and cover with beef broth. Add garlic, bay leaves, black peppercorns, and salt. Bring to a boil.

    Simmer

    Reduce the heat to low, cover, and let simmer for about 2.5 to 3 hours, until the meat is tender.

    Add Vegetables

    After the meat has simmered for about 2 hours, add the chopped cabbage, carrots, and potatoes to the pot. Cook for an additional 30-40 minutes until the vegetables are tender.

    Serve

    Slice the corned beef against the grain and serve with the vegetables. Use some of the broth as gravy.

    Slice the Irish soda bread loaf. Serve with butter and honey on the side.
