Calamari

Method

Preparing the Calamari

    Clean the Calamari

    Rinse the fresh calamari under cold water. Remove the head and innards, and slice the body into rings approximately 1/2 inch thick. Pat them dry with paper towels.

    Prepare the Coating

    In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well.

    Soak in Buttermilk

    Place the calamari rings in a separate bowl and pour the buttermilk over them. Let them soak for at least 30 minutes.

Frying the Calamari

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Calamari

    Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the calamari rings in the flour mixture until fully coated.

    Fry the Calamari

    Carefully add the coated calamari to the hot oil in batches, being careful not to overcrowd the pot. Fry for 2-3 minutes until golden brown. Remove with a slotted spoon and drain on paper towels.

Making the Marinara Sauce

    Sauté the Garlic

    In a saucepan, heat the olive oil over medium heat. Add minced garlic cloves and sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasonings

    Stir in the canned crushed tomatoes, dried oregano, salt, black pepper, and red pepper flakes. Bring to a simmer.

    Finish the Sauce

    Let the sauce simmer for about 15-20 minutes, stirring occasionally. Add fresh basil leaves just before serving.

Serving

    Plate the Dish

    Serve the fried calamari hot with a side of marinara sauce for dipping.
