For the Smoked Carrots

    Prepare the Carrots

    Peel the carrots and cut them into uniform sticks, approximately 4 inches long and 1 inch thick.

    Season the Carrots

    In a large bowl, combine the olive oil, smoked paprika, salt, and black pepper. Add the carrot sticks and toss to coat them evenly with the seasoning mixture.

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes before using. If using a stovetop smoker, prepare it according to the manufacturer's instructions.

    Smoke the Carrots

    Place the seasoned carrots in the smoker with the soaked wood chips. Smoke the carrots for about 30-40 minutes or until they are tender and infused with a smoky flavor.

For the Green Curry Buttermilk

    In a medium bowl, combine the buttermilk and green curry paste. Whisk until smooth and well combined.

    Stir in the lime juice to the buttermilk mixture for added flavor.
