Grapefruit-Sage Cordial Preparation

Make the Syrup
In a small saucepan, combine water and sugar. Heat over medium heat, stirring until the sugar dissolves completely.

Add Grapefruit and Sage
Once the sugar has dissolved, add the fresh grapefruit juice and sage leaves. Bring the mixture to a gentle simmer and cook for about 10 minutes.

Cool and Strain
Remove from heat and let the mixture cool. Once cooled, strain through a fine mesh sieve to remove the sage leaves, and transfer the cordial to a bottle. Refrigerate until ready to use.
Cocktail Assembly

Mix the Cocktail
In a large pitcher, combine the prepared grapefruit-sage cordial and Aperol. Stir gently to combine.

Add Prosecco
Slowly pour in the prosecco into the pitcher and stir gently to combine without losing the fizz.

Serve
Fill glasses with ice (optional) and pour the cocktail mixture over the ice. Garnish with grapefruit slices and fresh sage leaves.
