Roasting Mushrooms

    Prepare the Wild Mushrooms

    Preheat the oven to 200°C (400°F). Clean the wild mushrooms gently with a damp cloth to remove any dirt. Avoid washing them directly under water to prevent them from becoming soggy.

    Season and Roast

    In a large bowl, toss the cleaned wild mushrooms with olive oil, salt, and black pepper until evenly coated. Spread them out in a single layer on a baking sheet. Roast in the preheated oven for 15-20 minutes or until they are golden brown and tender, stirring halfway through.

Making Black Garlic Demi Glace

    Prepare the Demi Glace

    In a saucepan over medium heat, combine the black garlic cloves (smashed), beef stock, red wine, and fresh thyme. Bring to a simmer and reduce the heat to low. Let it simmer for about 20-25 minutes until the mixture has reduced by half.

    Finish the Demi Glace

    Remove from heat and strain the mixture through a fine sieve to remove solids. Return the liquid to the saucepan and stir in the butter until melted and combined. Season with salt to taste. Keep warm until ready to serve.

Cooking Pearl Onions

    Prepare the Pearl Onions

    In a small pot, melt the butter over medium heat. Add the pearl onions and sauté for 2-3 minutes until they start to color slightly.

    Simmer Onions

    Add water, salt, and sugar to the pot with the onions. Cover and let simmer for about 10-15 minutes until the onions are tender and the liquid has mostly evaporated.
