Method

Preparation

  1. 1

    Combine Ingredients

In a medium saucepan, combine 1 cup of Pernod with 2 cups of water and 1 cup of granulated sugar. Stir well to dissolve the sugar completely.

  2. 2

    Heat Mixture

Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally. Once the sugar is dissolved and the mixture is hot, remove it from the heat.

  3. 3

    Add Flavor Enhancements

Add 1 cup of fresh mint leaves and 1 tablespoon of lemon zest to the hot mixture. Stir gently and let it steep for about 30 minutes.

Serving

  1. 4

    Strain the Mixture

After steeping, strain the mixture through a fine mesh sieve or cheesecloth to remove the mint leaves and lemon zest.

  2. 5

    Serve Over Ice

Fill glasses with crushed ice (about 1 cup of crushed ice per glass) and pour the strained Pernod mixture over the ice.

  3. 6

    Garnish and Enjoy

Optionally, garnish each glass with a sprig of fresh mint or a slice of lemon. Serve immediately and enjoy your refreshing Pernod drink!
