Pasta Preparation

    Make the Dough

    In a large bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs until the dough comes together. Knead for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let rest for 30 minutes.

    Roll Out the Pasta

    After resting, divide the dough into four pieces. Using a pasta machine or rolling pin, roll out each piece into thin sheets. Cut into rectangular sheets for lasagna.

Bolognese Sauce Preparation

    Cook the Vegetables

    In a large pot, heat olive oil over medium heat. Add diced onion, carrot, and celery. Sauté until the vegetables are soft, about 5 minutes. Add minced garlic and cook for another minute.

    Brown the Meat

    Increase heat to medium-high, add the ground wagyu beef, and cook until browned, breaking it apart with a spoon, about 7-10 minutes.

    Add Mushrooms and Flavorings

    Stir in chopped wild mushrooms, tomato paste, crushed tomatoes, red wine, salt, and black pepper. Bring to a simmer and reduce heat to low. Cover and let cook for 30 minutes, stirring occasionally.

Filling Preparation

    Prepare the Filling

    In a bowl, mix the ricotta, wilted spinach, grated Parmesan cheese, and nutmeg. Stir until well combined.

Assembling the Lasagna

    Layer the Ingredients

    Preheat oven to 375°F (190°C). In a baking dish, spread a layer of Bolognese sauce on the bottom. Place a sheet of pasta over the sauce. Spread a layer of the ricotta filling, followed by another layer of Bolognese sauce. Repeat the layers, finishing with pasta and a final layer of Bolognese sauce on top.

    Bake the Lasagna

    Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 15 minutes, or until the top is bubbling and golden.

    Serve

    Let the lasagna rest for 10 minutes before slicing. Serve warm with additional grated Parmesan if desired.
