Method

Hummus

    Prepare the Hummus

    In a food processor, combine canned chickpeas, tahini, garlic, lemon juice, olive oil, salt, and water. Blend until smooth. Adjust consistency with more water if necessary.

Tabouleh

    Make the Tabouleh

    In a bowl, combine bulgur wheat and boiling water. Cover and let sit for 30 minutes. Once softened, fluff with a fork and add parsley, mint, diced tomatoes, diced cucumber, lemon juice, olive oil, and salt. Mix well.

Falafel

    Prepare the Falafel

    Soak dried chickpeas in water overnight. Drain and blend with onion, garlic, parsley, cumin, coriander, baking powder, and salt until coarse. Form into balls and refrigerate for 30 minutes. Heat oil in a pan and fry falafel until golden brown.

Toum

    Make the Toum

    In a food processor, blend garlic until finely chopped. Add egg white and lemon juice, then slowly drizzle in vegetable oil while blending until emulsified. Season with salt.

Baba Breads

    Warm the Pita

    Lightly toast or warm pita bread in the oven before serving.

Za'atar

    Prepare the Za'atar Mix

    Mix za'atar spice mix with olive oil to form a paste. Serve with bread for dipping.
