Preparing Roasted Garlic

Roast the Garlic
Preheat your oven to 400°F (200°C). Cut the tops off the garlic bulbs to expose the cloves. Drizzle olive oil over the exposed cloves and wrap the bulbs in foil. Place on a baking sheet and roast in the oven for about 30-35 minutes, or until the cloves are soft and caramelized.
Preparing Bone Marrow

Roast the Bone Marrow
While the garlic is roasting, prepare the bone marrow. Preheat your oven to 450°F (230°C). Place the bone marrow bones on a baking sheet, sprinkle with salt, and roast for 15-20 minutes until the marrow is soft and starts to separate from the bone.

Combine Ingredients
Add the roasted garlic cloves (squeezed out of their skins), butter, heavy cream, and the roasted bone marrow to the mashed potatoes. Mix until everything is well combined and creamy.

Taste the whipped potatoes and season with additional salt and black pepper if needed. Mix well.
