Method

Roasting the Corn

    Prepare the Corn

    Preheat your grill to medium-high heat. Husk the corn and remove all silk. Brush each ear of corn with olive oil and sprinkle with salt.

    Roast the Corn

    Place the corn directly on the grill. Roast for 10-15 minutes, turning occasionally until the corn is charred and tender. Remove from the grill and let cool slightly.

Making the Coriander Aioli

    Combine Ingredients

    In a mixing bowl, combine mayonnaise, minced garlic, chopped coriander, lime juice, and salt. Mix well until smooth and creamy.

    Chill the Aioli

    Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld.

Preparing the Housemade Tajin

    Mix Tajin Ingredients

    In a small bowl, combine chili powder, salt, and lime zest. Mix until well combined.

Assembling the Dish

    Serve the Corn

    Once the corn has cooled slightly, spread a generous layer of coriander aioli over each ear of corn.

    Add Tajin and Queso

    Sprinkle the housemade tajin over the aioli-covered corn and then top with crumbled queso fresco.
