Method
Bone Marrow Preparation

Preheat the Oven
Preheat your oven to 450°F (230°C).

Prepare the Bones
Place the bone marrow bones upright on a baking sheet. Drizzle with olive oil and season with sea salt and black pepper.

Roast the bones in the preheated oven for about 15-20 minutes or until the marrow is bubbly and slightly browned.

Add the lobster tails to the pan, pour in lemon juice, and cook for an additional 5-7 minutes, turning occasionally, until the lobster is cooked through.

Remove from Heat
Once cooked, remove from heat and let it cool slightly before removing the lobster meat from the shells.
Horseradish Sauce Preparation

Mix Ingredients
In a small bowl, combine prepared horseradish, sour cream, and chopped fresh chives. Mix until well combined.

Make Vinaigrette
In a bowl, whisk together sautéed leeks, white wine vinegar, salt, and black pepper.
Garnishing and Serving

Toast the Bread
Grill or toast the slices of crusty bread until golden brown.

On a platter, arrange the roasted bone marrow, lobster meat, and drizzle with leek vinaigrette. Top with fresh parsley and pickled shallots.
